Just peachy

Ahh, the joys of peach season. Whether they’re eaten solo, sliced on top of a salad, blended in a smoothie or baked into a cobbler, summer peaches are truly a heavenly joy. The sweet, creamy texture of a peach also lends itself well to spicy or savory dishes, such as peach salsa.
Peach salsa is so quick and easy to put together — especially after a busy summer afternoon. It practically goes with everything and adds a pop of color to the meal. This recipe is so easy to make.
Ingredients:
4 fresh peaches
5 green onions OR one small sweet onion (Green onions will deliver a fuller onion flavor while a sweet onion tends to have a milder, sweeter flavor.)
1 medium jalapeño pepper
1 red bell pepper
1 lime
Fresh cilantro
Extra virgin olive oil
Salt and freshly cracked black pepper
Steps:

Cut peaches into half-inch chunks. Add everything to a large mixing bowl as you go.
Finely dice the onions so that they enhance rather than overwhelm the final dish.
If you prefer less heat, carefully remove the membrane and seeds from the jalapeño. For somewhere in the middle heat range, retain about half and for the full monty, retain everything. Dice peppers.
For added brightness and contrast dice the red bell pepper.
Wash and dry the cilantro. I find that dry cilantro chops with less bruising than when the leaves are damp.
Add 2 tablespoons of the cilantro to your bowl along with the juice of a fresh lime, two tablespoons of extra virgin olive oil, and salt and pepper to taste.
Before serving, allow the salsa to sit for about an hour so the flavors combine.
Spoon onto your favorite dish. I prefer an extremely liberal approach because this salsa is that good.
